Currently we have a robotiq wrist camera in conjunction with 2f 140 grippers.

for our current operation picking round parts from the inner diameter/outer diameter two fingers isn't efficient enough to manage.

I would like to keep the wrist camera, but use a onrobot 3fg15 3 finger concentric gripper. 

what challenges will i face?

    The wrist camera is provided with an adaptive plate. You can mount it on the camera and recover UR bolt pattern to mount the tool of your choice.

    There is still the possibility to use the 2F140 with 3 contacts points. You could design custom finger like here below (top view).

    Sorry for the quality of the draft sketch. The idea is to have a fork on one side and a finger on the other side.
